Are you having your Corned Beef and cabbage today?

It’s funny but a little research reveals that the dish of Corned Beef and cabbage is not really an Irish dish but is an Irish-American adaptation.  Pork is the meat of choice in Ireland so when immigrants came to America they found bacon and ham to be a little out of their price range.  Being the highly versatile folks they are, they substituted the much cheaper and readily available Corned Beef.

So…Reuben dear, you would be a ham sandwich or a BLT in Ireland.  Thank goodness for the thriftiness of the Irish-Americans…in all of us.

Good morning, having my green bagels...hee! No corned beef, though...my mom used to make that, so i have had my fill! will do some irish soda bread later in the day with my coffee!! xo have a great day

Top of the morning to you. How wonderful! I learned something new today and it's still early. I think I'm going to make corned beef and cabbage or maybe an Irish stew for dinner tonight. Happy St. Patty's Day.

So I guess Pork Roast is OK as long as it served with cabbage, carrots and potatoes???

Happy St. Pat's Day to you, too! I made corned beef & cabbage with potatoes, carrots & onions--more of a New England Boiled dinner! I also made an Irish Soda Bread scone. Yum!
